CARLINVILLE -- There’s nothing fancy about Taylor’s Mexican Chili on the downtown square.

Framed newspaper stories and old photos line the brown paneled walls of the chili parlor. Six wooden stools front the counter, and a dozen well-worn tables are perched on a linoleum floor. At the cash register are boxes of Snickers and PayDay bars, for diners who want dessert.

But customers don’t come for the ambiance of the place, which has an interior entrance to the bar next door, the Anchor Inn. They come for the chili.

“Everybody who comes in here has a story about the chili,” said Bobby Whitlock, the chili parlor’s longtime cook who bought the place eight months ago with his wife, Chaney.

Carlinville resident C.O. Taylor -- the story goes -- learned to make traditional Mexican dishes while working at the Mexican National Exposition at the 1904 St. Louis World’s Fair. Back home after the fair, Taylor one day came to the aid of a Mexican stranger. To repay the kindness, the man taught Taylor how to make chili con carne with beans.

Taylor opened a small chili parlor, featuring the Mexican recipe, on West Main Street in the fall of 1904. The restaurant has had several locations since then, but the original recipe continues to be served.

Taylor’s Mexican Chili isn’t for diners with wimpy palates. In fact, on the restaurant tables sit bottles of cider vinegar, a splash of which is said to cut the heat in the spicy concoction.

Whitlock – who eats the chili a few times a week -- said the red beans are cooked separately from the sauce, which is made with sirloin, onions, garlic and chiles. If you don’t see grease on top of the bowl, it wasn’t made properly.

“Once we have you in here,” he said, “you’re hooked.”

He said Taylor’s was featured about 10 years ago on “Food Finds,” a TV show about road food that used to be on the Food Network. That brought a slew of national and international travelers, who still manage to find their way to the old building on Route 66.
