Beet Jelly Recipe

An Estate Sale Treasure

I havenâ € ™ t been a sale of succession to AGESA € "In general, I donâ € ™ t like them because they are crowded and filled with people who have this manic â € œIt € BE Minea look in their eyes. Itâ € ™ s behavior as the essential basis of rights - survival of the fittest - comes when two people are reaching for the same item in one of those things. I saw a man of average age of almost getting into a scuffle with an older woman on a piece of depression glass. It is like the shows I see on TV when I was a kid, where women would go crazy at a sale in lingerie Basement Filene € ™ s.

So frankly, I find the sales of goods to be a little sad. Someone € ™ s (and usually you can tell it's an elderly woman) life is spread before us, came out of cupboards, drawers and cupboards, and all with price tags. 70 and over collection of quilts and partitions, and Hummel figurines have ended, his possessions scattered to the winds. I donâ € ™ t plan to stop it, we were on the way home from a Saturday morning coffee and something just made me stop. (Iâ € ™ m lucky to be blessed with a husband who doesnâ € ™ t mind the vagaries of the mine.)

Once we wiggled our way inside, I headed straight to the kitchen. This is where I can always find something, like a kitchen gadget with a few old bakelite or a good mixing bowl. That day, I was rewarded with the recipe box indicated. When I got home and started going through it, I felt like an archaeologist, sifting through the life of the food of the 20th century.

The cards were old and faded, and many of them dating from € ™ s 40a, 50a and 60a € ™ s € ™ s. There were at least three different hands to write these cards, all of them displaying the beautiful calligraphy in the days leading up to the pens. However, some of these cards had been typed on an old typewriter, with the obvious stick. No Delete or Backspace button here. Revenues were organized with preprinted dividers, and those you want too, like donuts, icings, jellies, and cookies.

While there was a mix of salads, main dishes and breads, by far, most recipes were for pickles. In fact, once I went through them, I understand that half of the recipe cards were of different types - sweet pickles, dill pickles, beet pickles, corn relish, green tomato relish, picallilli, Indian chutney, mustard picklesâ € |. most everything you could imagine. This makes sense because in the basement of the estate sale home were cupboards filled with Mason and jelly and jam jars. This woman was a serious canner.

In Town Hobby-Homesteading: Pickled Beets and Jelly

We pulled quite a few beets from the garden. Wonderful, red yummies. I love pickled beets. Before they can be pickled though, they have to be par boiled. After we were done par boiling, we had several quarts of beet water or rather beet juice. A few cups had to be used in the pickling, but after that there was still quarts of it left. We really didn't want to waste it. I stood there and looked at the juice and thought, beets are tasty and kind of sweet...what about making jelly with it? After some consideration, we decided this would be an excellent use to put the left over juice to. I jumped on the computer and looked up beet jelly, and sure enough, even though we had never heard of such a thing and beet jelly seemed like a new invention to us, someone else had already thought it. Not only had it already been thought of, but there were numerous recipes for it. I was thankful for the recipes. I would never have thought of putting a half a cup of lemon juice into it. So armed with a recipe and the beet juice, we went to work. It turned out wonderful! A pretty red in the jar, it tastes absolutely fantastic! I am so happy we didn't have to pour away all of that juice. We had planned to use some in soups and stews and breads, but even with that there would have been too much. Now all of that extra is sitting in jars in the pantry.  Add lemon juice to the beet juice. Mix in Sure Jell and bring to a boil. Stir in sugar and stir constantly until it reaches a boil again. Continue stirring while it boils hard for 3 minutes. Ladle into clean jars (really? Do clean jars really need to be mentioned? Is there someone actually out there that would ladle it into dirty jars?) Fish lids and rings out of their bowl of hot water, place them on the jars (after making sure to wipe clean the rim and threads on the jar) and let cool.
